" Vegetable Frittata "



Today's lunch is " Vegetable Frittata"
I had leftover roasted veggies from last night.
Oven-roasted Sweet-potatoes, Carrots, Broccoli were perfect for a frittata.
Sliced Onions and Mushrooms were lightly fried before adding to the roasted veggies.
Eggs and Parmesan went into the pan before it went to oven.



Baby Spinach Salad with Walnuts and Mandarin Oranges
is dressed with Creamy Dressing to make a lunch plate.
